Ingredients:
2 lbs of sirloin or round steak thinly sliced
2 cans of lump crab meat
1 (8oz) package of cooked shrimp
Sliced pepper jack cheese
1 bottle of your favorite Cattleman’s BBQ Sauce
Toothpicks soaked in water
Instructions:
Begin with thin cut sirloin or round steak, approximately the size of your hand. Pound it out with a meat hammer until the steak is double in size. Marinate overnight in Cattleman’s BBQ sauce, enough to cover. The next day, remove the steaks from marinade. Then lay the steak out flat on a cutting board and add your favorite creole seasoning. Start by laying two or three pieces of shrimp on the steak and then add a pinch or two of crab meat. Pour just a little Cattleman’s BBQ sauce over the seafood mixture, and roll up the steak. Be careful not to roll up the steak up too tight or all the BBQ sauce will come out. Next you insert two or three toothpicks into the rolled up steak to hold it together. Place onto a pre-heated grill and cook until you get nice grill marks on one side, then flip. After flipping baste with more Cattleman’s BBQ sauce. When it is cooked to desired temperature (i.e. medium, well done) turn again and then top with pepper jack cheese. When the cheese is melted you are ready to enjoy.
