During Memphis in May 2004, my friend Lisa McGee and I visited the tent of a friend and had a wild idea to start a Patio Porker team of our own. Lisa and I are both educators, and she envisioned the team name as "No Pig Left Behind." The following January, we recruited a few more of our friends, Carla Henry, Felicia Crutcher and Dionne Burton, to join us, and they blindly and willingly accepted. When we learned in March that we had been chosen to participate, we were struck with a mix of excitement and fear, having NO idea what we were to do. We attended the cook's meeting and thought we could handle whatever came our way.
Once Memphis in May™ rolled around, we learned that we were SADLY mistaken. We had no idea what we were doing, had no idea about electricity or even signing in. We were told that Thursday that we would not be getting a "can" because we had not properly registered. We were completely lost. Year two was only slightly better. We felt like we were really getting the hang of things only to discover that I had made a complete disaster of the floor. Year three, however, was a complete success for us, the team of teachers, counselors and administrators from various schools around Memphis and Shelby County. We placed 27th this year - up from 33rd last year. We were just glad not to be disqualified.
Our most famous and requested recipes are our delicious hot dogs and our BBQ Bologna, which we marinate for several hours before grilling. While everyone else has cooked Boston Butts, whole chickens, ribs, pork steaks, etc.., we always find it amusing that the other teams come down to get a bologna sandwich or hot dog from the "teachers." We’ve never won anything and are perfectly content to keep it that way. Our tent is becoming famous among teachers near and far, and we have earned a reputation as the most fun educators anywhere.
